I should write a cookbook called 10 minutes meals.
I’ve been on a bit of a cooking streak lately, which is odd, but delicious. I thought I’d share one of my staples with you.
I’m only one girl, which is why I rarely cook. If I put forth a tremendous amount of effort to make something, its either not worth to make enough for one meal, or I’m eating the same thing for a week straight so I don’t waste any.
So I’ve taken to quick versitile foods that last a while. For example, my garbonzo tomato sauce.
1 can diced tomatoes
1 can garbonzo beans
salt, pepper, red peppers flakes and basil to taste.
Directions: Heat everything in a pan.
Doesn;t get much easier than that.
It makes a ton, it freezes well, and you casn use it for a lot of different things. The night i made it i had it with pasta.

Last night, I got home from work and wanted something light, so I baked a acorn squash, heated the sauce in the microwave and viola.

Its also good on rice or on top of fish or chicken. I eat it by itself sometimes, too, if I’m feeling exceptionally lazy.
